Energy Modeling for Kitchen Area

Hi 

I am doing Energy Simulation for Correctional Facility. Facing difficulty for the Kitchen area, which consists of

1) Air furnance- 1100 cfm

2) Make Air unit - 4700 cfm (for winter)

3) Two Exhaust fan-  5000 cfm (each, for summer, including gravity intake hood))

4) Kitchen Grease Exhaust fan- ( 5500 cfm)

5) Ware washing- 550 cfm. 

I Appriciate if anybody can share idea regarding, how to correlate so that i can input in Trane for energy modeling.

In Trace:

Under Create Rooms, airflows tab:

  1. Enter Air Furnace 1100 cfm for "Supply Air".
  2. Enter 4700 cfm for ventilation. 
  3. Enter 10500 cfm for exhaust (this will need a schedule to divide the two airflows)
  4. Setup an adjacent room
  5. Not sure what the "ware washing is" Maybe add it to ventilation and schedule it
  6. Setup any infiltration (if any air coming in from outside)
  7. Go to adjacent room and select another adjacent room (to make a cascade of airflow to the kitchen)
Under Create Systems DOA tab:
 
  1. Select Dedicated OA and choose the appropriate control type (cool/heat?)
Under Create systems Fans:
  • Set up 1 fan for your exhaust fans (the sum of their total power). Make it VAV so it can unload.
  • Add outdoor air fan 
  • Add Supply fan
The main trick of this is going to be setting up your adjacent rooms and correct infiltration. Remember you will need:
(Ventilation + Infiltration + Adjacent room Ventilation) >= Maximum exhaust rate.

Thank you bob. 

But my make up air unit is Gas heating Make up air unit which is used for the winter. So i have problem with two unit in the same room. and ware washing is exhaust fan for the disc washer.

What problem does the gas unit pose?

I am still not clear regarding your

step no 4- creating an adjacent room

step no 7- cascade flow.

Are you trying to say to create virtual room near kitchen?

Under create rooms--> airflows

in the upper right, there is a field to select an adjacent room. You need an adjacent room when you are exhausting more air than you are supplying. 

ie, if you are modeling a restroom, Go to create rooms, select the restroom, then go to the airflows tab. Then select something like hallway as an adjacent room.

To model a cascade (if you need more exhaust air than is available in the restroom + hallway). Select the hallway (under create rooms), and then in the hallway, select another adjacent room (say for instance, select classroom)
