Ceiling fan power is something I'd intuitively define as an equipment
load. If they have light kits and operate on the same schedule as your
lights, then it may be easier to simply account for the fan energy in
your lighting W/SF.

As to the meaning of the end-use categories in the graphical reports:
Check out the "Modeling Procedures Quick Reference Guide" PDF which you
can reference under the help menu in eQuest (it came with your eQuest
installation). Page 155 onwards breaks down each reported end-use
category, examples of what's included in each, and where in eQuest you
might start looking to review those inputs. It's a pretty good
reference to print out, or be aware of at least.
